Oak-Aged Wild Ale Refermented with Japanese Red Shiso

セラータは、日本の赤シソを使用した樽熟成ワイルドビールで、オレゴン州ポートランドにある著名なブルワリーの１つであるジャイガンティックブルーイングとのコラボレーションビールです。2021年の３月に、地元の湧き水にテキサス産大麦麦芽と小麦、アマリロホップ、そして日本の赤シソを加え醸造しました。自社の混合培養酵母で一次発酵させた後にオーク樽で寝かせ、約一年間かけて熟成させています。その後ブレンドし、瓶内再発酵で、更に自然に熟成させ最終調整をしています。

Serrata is a barrel-aged wild beer with Japanese Red Shiso, brewed in collaboration with Gigantic Brewing in Portland, Oregon. In March of 2021, we brewed with well water, Texas-grown malted barley and wheat, Amarillo hops, and Red Shiso. After primary fermentation in stainless steel with our mixed culture, we barrel-aged the beer in neutral oak for about a year. We then blended and naturally conditioned through re-fermentation in the bottle.
